This a good book and a necessary read to learn about the gut and how to start taking care of it. But the reviewers are right that Dr Davis does too much repeating the same stuff over and over the closer it gets to the actual steps to the SIBO/SIFO protocols, and when you finally get there it falls short on clear steps. In addition to my video review: I'm 45. Ive had an ankle issue my entire life since it was broken when I was 9 months old. For 2 years straight it has bothered me a lot. Three days in in this yogurt I had no ankle pain or discomfort. That was the first thing I noticed. Multiple orthopedic surgeons told me I was out of luck. Tbat may be true but for over 5 weeks now I've had no issues with it. (I have avascular necrosis of my talus.)Additionally, I've lost 11lbs. I seemed to have plateaued recently, I've been holding steady for a week now.I'm sleeping all night. I'm a stressed out CEO working a lot and I have a young family.I have more energy and focus. I'm not tired during the day anymore. My skin is looking better as well.I feel better than I did 7 years ago. In fact, I log my workouts with cardio and free weights and I'm beating my numbers from 2016. (It is February 2023 as I wrote this.)I'm looking forward to trying other recipes and testing out some of the other food and lifestyle aspects discussed in this book.I do also like that the book is realistic and it doesn't make claims everything is certain or perfect. This book introduces the idea of restoring a more diverse inner ecosystem NOT by taking probiotics, but by fermenting those probiotics as yogurts and other ferments to explode their population numbers for much greater efficacy (and economy).I got this book when it was hot off the press and have been making all the different yogurts for months now. I can honestly say that I feel better, even though I'd already been on a very "clean", 100% organic, low carb, no-sugar-or-grains diet for many years now. Since adding the ferments to my diet my energy has improved, my skin is clearer, and some inflammatory issues have resolved.For other reasons than the A1 protein thing, I have to avoid milk, so I've been using coconut milk instead. Now the dairy-based recipes are fine... my husband has been making them and lovin' them. However, even though Dr. Davis says that the sugars (and proteins for that matter) get broken down and digested by the bacteria, in the coconut milk recipe as printed in the book they are extremely problematic. They cause the yogurt to expand up out of the jar (even when given 1 1/2" of headroom), and the finished product always ends up with a pink/green mold or yeast on top. And after scooping that off, the yogurt below is sickeningly sweet.We use a calibrated sous vide at the exact recommended temp, we sanitize everthing in boiling water before starting (and then let the jar, lid, & utensils cool before starting), are very gentle at the end when adding the probiotic, and yet we got this consistently bad result over and over.Here's how we fixed it:1) use TWO cans of coconut milk, not one (I think that is a misprint in the book - all the other recipes call for a quart of liquid, not a pint, which is one can).2) omit the sugar completely - the inulin or raw potato starch is all the bacteria need for food.3) after whizzing the coconut milk and powders together, which makes it all foamy, pour it in your sanitized quart jar and let it sit for half an hour or so, gently stirring occasionally with a whisk to get the bubbles to surface and dissipate.4) when the surface is free of bubbles and the temperature is right, add the probiotic and gently mix it in slowly with the whisk.5) Now coat the surface by pouring a thin layer of coconut oil on the top to keep the surface from contact with air, which solves the mold problem. (If your coconut oil is solid, warm it above 75 degrees and it will reliquify)I bought some fabulous stainless steel lids with 100% silicone liners off Amazon (no BPA), and I put these on very loosely to let any gasses escape.Seems like a lot of work, but once you get the process down it doesn't take that long and the results are worth it.Photo is of a coc milk L.reuteri culture that did NOT have a coconut oil "seal" on the top.
